We promise to use the freshest and “cleanest” ingredients available and strive to use organic fruits and vegetables when possible.
Ice Cream Base Ingredients: (All dairy ice cream is made with these base ingredients)…
Cream, Milk, Whey Protein, Cane Sugar, Natural Guar Gum, Natural Locust Bean Gum.
Vanilla:
A
key ingredient in most ice cream flavors. We use the highest quality
Vanilla Beans from Madagascar and Tahiti. (Both organic and conventional
depending on the flavor profile desired)
Chocolate:
We source our chocolate from Belgium. We always use the best Pure Dark chocolates we can find.
Fruit:
We
use Organic Strawberries, Blueberries, and Cherries. Our raspberries and
watermelon are usually conventional. Other seasonal fruits are picked
for freshness and source and can be either Organic or conventional.
Inclusions:
Baked or Cooked Items we put into our ice cream after freezing.
Going for familiar flavors: We use Oreo®, Reece’s® Peanut Butter Cups, & Heath® in a few of our comfort flavors.

Allergen Information:
While
we do not put nuts in our ice cream maker, we do share the facility
which uses Tree Nuts, Peanuts, Soy, Milk, Eggs & Wheat.
We do our best to reduce the risk of cross-contamination in our scoop shop by not putting nuts or wheat into the ice cream maker. The servers at our shop are supplied with scoops that are only used with the non-dairy and no nut flavors. Please mention any nut allergy, and the service person will happily use a clean, sanitized and dry scoop for your portion,
Our Milk Products are fresh and delicious.
State Licensed and Inspected
Our
facility in Truckee is inspected Quarterly by the California Department
of Food and Agriculture, Dairy Division. Lab samples are taken and
tested at each inspection. We have always maintained an “A” rating. A
copy of the inspection results are available upon request.
Non- Dairy Options (Always Vegan and Gluten Free):
Coconut Base
We
use a high fat Organic Coconut Cream in our coconut milk based frozen
dessert. We use Organic dried coconut flakes. We make our own dark
chocolate chips. We also use a small amount of Vanilla and Coconut
Extract and Natural Guar Gum.
Sorbet
We use Fresh Fruit*, Water, Cane Sugar and a small amount of Natural Guar Gum.
*
Organic Strawberries, Blueberries, Lemons and Cherries. conventional
raspberries and Watermelon with some special exceptions when we can
source these two in Organic varieties.
Guar Gum:
Guar
Gum is extracted from the Guar bean, an annual legume, made into a
powder, and used as a thickening agent. Guar also helps prevent unwanted
ice crystal growth in a freeze thaw situation. It gives ice cream and
Sorbet a nice mouth feel and when used in conjunction with Locust Bean
Gum replaces then need to use egg yolks in ice cream.
Gluten:
Our
ice cream base is Gluten Free. There will only be gluten in flavors with
baked inclusions such as cookies, brownies and crisps. Some of the
Gluten Free Ice Cream flavors are Vanilla, Chocolate, Salted Caramel,
Mint Chip, Coffee, Dark Cherry, Blueberry, Caramel Swirl, Rocky Road,
Coconut, Mocha Almond Fudge, Toffee Chip, Chocolate Chip and others
that we can tell you about in the shop.
